Using the savoir faire of Pénélope’s family, we practice assemblage to create our Bordeaux-inspired wines. Assemblage is the art of blending wines from different grape varieties and terroirs. It is not just a technical process; it’s a meticulous craft passed down through generations, imparting complexity, balance, and longevity to wines. Each grape gives something to the blend: more tannins, vibrant colour, and particular aromas like spice or cassis. Our use of assemblage continues the legacy of Pénélope’s ancestors, fostering a connection between the past and the present.
